Bombay Masala Egg and Cheese Toastie (without toaster)

Make this green chilli chutney Bombay toastie with egg and cheese, that’s perfect for either a breakfast or brunch! It’s packed with punchy flavours, a cheesy omelette and of course, its toasted to perfection. Did I mention its vegetarian friendly?!

If you’re like me and you love a bit of a savoury breakfast, then look no further as this Bombay chilli cheese toastie is for you. It is a perfectly balanced toastie, with the crunch of our sourdough bread, the softness of our cheesy egg omelette and of course it contains a bit of a kick from our coriander and chilli chutney.

I use tomatoes and white onions as my additions (in addition to the cheesy egg omelette) and a lot of recipes call for adding potatoes (you totally can add aloo to this recipe, but I prefer it without!)

Other additions that could work well with this Bombay toastie are cucumber, peppers, spinach or even paneer / tofu.

The Bombay toastie is a street food classic and so satisfying to eat as a snack, or in my case a perfect breakfast sandwich.

Origin of the humble Bombay sandwich

The humble sandwich seems like it was perfectly curated for the fast-paced nature of India’s financial centre, Mumbai. There are sandwich walas tucked away on so many different street corners.

What I find interesting is that even though Bombay is now called Mumbai, the toastie is almost never referred to as the ‘Mumbai Toastie’.

I wonder if this has something to do with the fact that the toastie was largely sown together from the various European colonial powers that ventured into India over the centuries, with the Portuguese importing bread and the British specifically leaving their sandwich imprint! There is almost an underlying and hidden statement in the name ‘Bombay sandwich’, reminding us that it is distinctly a product of a different time where the city was operating under a different name.

Its survival and modernisation are a testament to just how plain delicious it is.

You’ll find in India (and beyond) that there are now cool restaurants remixing the classic sandwich with avocado, beetroot and different meats. I’d like to place myself in this cool category of recipes, as my version is somewhat my own spin on the sandwich while bearing in mind, its tradition.

How to make the chutney for this sandwich?

The chutney is very simple and only takes five ingredients to put together, coriander, green chillis, mint, garlic and some olive oil.

Follow the following steps for the chutney:

  1. Roughly chop up a handful of coriander, two or three green chillis and around two cloves of garlic.
  2. Place all of the ingredients in a blender with some oil and blend until the ingredients are combined, but still slightly chunky. Add some water if required to make the blend a bit smoother and if your blender is getting stuck!

And there you have it, a super quick and easy green chutney.

Note that this is optional but you can also add some salt and a squeeze of lemon to the chutney if you want to be a little bit extra!

Since this chutney has a bit of a kick to it, it would be balanced out perfectly with my sweet chais. I would recommend trying this with my karak chai, or my iced chai!

Step by Step Instructions

Blend up your chutney ingredients together and place the combined chutney to the side.

Whisk an egg together (optional but you can add some salt / turmeric / chilli powder to the omelette mixture) place in a fry pan, add in your preferred amount of cheese and flip in half for the omelette shape.

Spread chutney on both sides of the toastie and add in your chopped onions, tomatoes and omelette (or your other preferred additions).

Add some more butter to a saucepan on a low heat and place in your sandwich.

In order for it to get a good toast, place another small saucepan and bowl on top (or whatever else you might have to hand in your kitchen) to give the sandwich a good press.

Toast on both sides for around 3 – 4 minutes.

Do I need a toastie machine or a sandwich maker?

No you don’t need any of those machines! I made this simply in my fry pan.

What should I serve this with?

You can serve this with a karak chai, iced chai, or coffee.

Equipment

  • blender to blend your chutney together
  • 2 small fry pan one to toast your bread and the other to press down your toastie if you don't have a toastie presser to hand
  • small bowl to place on top of your fry pan if you don't have a toastie presser to hand

Ingredients
  

Chutney Ingredients

  • Handful Coriander Rip off a bunch of coriander
  • 2 / 3 green chillis
  • 4 / 5 leaves fresh mint
  • 2 cloves garlic
  • 2 tbsp oil preferred oil, could be extra virgin, normal olive oil etc.

Toastie

  • 2 slices sourdough or preferred bread
  • 1 / 2 eggs you can adjust this based on how large you would prefer your eggs
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 1 half tsp salt
  • 1 tsp pepper
  • 1 handful grated cheddar cheese or more if you would like your omelete to be super cheesy
  • 1 tomato diced
  • 1 half onion
  • 1 tsp ghee

  • Place all of the ingredients in a blender with some oil and blend until the ingredients are combined, but still slightly chunky. Add some water if required to make the blend a bit smoother and if your blender is getting stuck!

Toastie Instructions

  • Whisk an egg together (optional but you can add some salt / turmeric / chilli powder to the omelette mixture) place in a fry pan, add in your preferred amount of cheese and flip in half for the omelette shape.
  • Chop up your tomatoes and onions. I chose to chop my onions up into circles and my tomatoes into large slices.
  • Spread chutney on both sides of the toastie and add in your chopped onions, tomatoes and omelette (or your other preferred additions).
  • Add some more butter to a saucepan on a low heat and place in your sandwich.
  • In order for it to get a good toast, place another small saucepan and bowl on top (or whatever else you might have to hand in your kitchen) to give the sandwich a good press.
  • Toast on both sides for around 3 – 4 minutes.
